Ingredients

  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup + 2 tablespoons sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha
  • 4 cups coleslaw mix

Instructions

  1. Cook the Lo Mein noodles according to package instructions, then set aside.
  2. In a large skillet, heat peanut oil over medium heat. Add the ground pork and cook until browned.
  3. Toss in 1/4 cup of sliced green onions and sauté for another minute.
  4. In a small bowl, whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until combined.
  5. Pour the sauce over the cooked pork and mix well.
  6. Add the noodles and coleslaw mix to the skillet, tossing everything together for 2–3 minutes until everything is coated and heated through.
  7. Garnish with the remaining green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For a gluten-free version, use gluten-free soy sauce and rice noodles.
