- 8 oz wide Lo Mein noodles, cooked and rinsed
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook the Lo Mein noodles according to package instructions, then set aside.
- In a large skillet, heat peanut oil over medium heat. Add the ground pork and cook until browned.
- Toss in 1/4 cup of sliced green onions and sauté for another minute.
- In a small bowl, whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until combined.
- Pour the sauce over the cooked pork and mix well.
- Add the noodles and coleslaw mix to the skillet, tossing everything together for 2–3 minutes until everything is coated and heated through.
- Garnish with the remaining green onions before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For a gluten-free version, use gluten-free soy sauce and rice noodles.
