- 4 burrito-sized flour tortillas
- 2 cups shredded chicken
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 can chopped green chilies
- 1 can diced tomatoes with green chilies
- 16 oz Queso Blanco Velveeta
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, taco seasoning, sour cream, green chilies, and diced tomatoes in a mixing bowl. Stir until well mixed.
- Lay out a tortilla and spoon a generous amount of the chicken mixture down the center. Sprinkle some shredded cheese over the filling.
- Roll the tortilla tightly, then place it seam-side down in a greased baking dish. Repeat for remaining tortillas.
- Pour the melted Queso Blanco over the top, ensuring each enchilada is covered.
- Sprinkle any remaining cheese on top of the Queso for extra cheesiness.
- Bake in the preheated oven for about 25-30 minutes, or until the top is bubbly and golden.
- Allow to cool for a few minutes before serving to let the cheese set slightly.
Notes
Garnish with fresh cilantro or sliced green onions, and consider a dollop of sour cream or hot sauce for added flavor.
