  • 1 packet taco seasoning

  • 1 can diced tomatoes with green chilies
  • 16 oz Queso Blanco Velveeta

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, taco seasoning, sour cream, green chilies, and diced tomatoes in a mixing bowl. Stir until well mixed.
  3. Lay out a tortilla and spoon a generous amount of the chicken mixture down the center. Sprinkle some shredded cheese over the filling.
  4. Roll the tortilla tightly, then place it seam-side down in a greased baking dish. Repeat for remaining tortillas.
  5. Pour the melted Queso Blanco over the top, ensuring each enchilada is covered.
