- 1 pound Boneless skinless chicken breasts
- 1/2 cup Cornstarch
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 teaspoon Garlic powder
- 1 teaspoon Paprika
- 1/4 cup Vegetable oil
- 3 cups Cooked jasmine rice
- 2 cups Shredded lettuce
- 1 cup Diced cucumber
- 1 cup Shredded carrots
- 1/2 cup Chopped green onions
- 2 tablespoons Sesame seeds
- 1/2 cup Mayonnaise
- 1/4 cup Sweet chili sauce
- 1–2 tablespoons Sriracha
Instructions
- Start by cutting the chicken into bite-sized pieces and placing them in a bowl.
- In a separate dish, mix together the cornstarch, salt, pepper, garlic powder, and paprika. Coat the chicken pieces with this mixture thoroughly.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken in a single layer, frying until golden brown and cooked through—about 5-7 minutes. Make sure to flip the pieces for even cooking.
- While the chicken cooks, prepare your rice if it’s not already done, and chop the fresh veggies.
- In a small bowl, mix the mayonnaise, sweet chili sauce, and Sriracha to create the bang bang sauce.
- Once the chicken is cooked, remove it from the skillet and drain on paper towels to absorb excess oil.
- Assemble your bowls by placing a base of rice, then adding the chicken, shredded lettuce, diced cucumber, and carrots. Drizzle with the bang bang sauce and top with green onions and sesame seeds.
- Serve immediately, and enjoy!
Notes
For a twist, you can substitute chicken with shrimp or tofu. Don’t skimp on the sauce for better flavor!
