  • 3 cups Cooked jasmine rice
  • 2 cups Shredded lettuce
  • 1 cup Diced cucumber
  • 1 cup Shredded carrots
  • 1/2 cup Chopped green onions
  • 2 tablespoons Sesame seeds
  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet chili sauce
  • 12 tablespoons Sriracha

Instructions

  1. Start by cutting the chicken into bite-sized pieces and placing them in a bowl.
  2. In a separate dish, mix together the cornstarch, salt, pepper, garlic powder, and paprika. Coat the chicken pieces with this mixture thoroughly.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken in a single layer, frying until golden brown and cooked through—about 5-7 minutes. Make sure to flip the pieces for even cooking.
  4. While the chicken cooks, prepare your rice if it’s not already done, and chop the fresh veggies.
  5. In a small bowl, mix the mayonnaise, sweet chili sauce, and Sriracha to create the bang bang sauce.
  6. Once the chicken is cooked, remove it from the skillet and drain on paper towels to absorb excess oil.
  7. Assemble your bowls by placing a base of rice, then adding the chicken, shredded lettuce, diced cucumber, and carrots. Drizzle with the bang bang sauce and top with green onions and sesame seeds.

Notes
