  • 3 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon Italian seasoning
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • Salt and black pepper to taste

Instructions

  1. Pat each chicken breast dry and season with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add chicken and sear for 4–5 minutes per side until golden and cooked through. Remove chicken to a plate, tent with foil to rest.
  4. Reduce heat to medium, sauté minced garlic until fragrant (30–45 seconds).
  5. Add broccoli and cherry tomatoes, sauté for 3–5 minutes until broccoli is tender-crisp.
  6. Lower heat to medium-low, stir in cream cheese until melted, then fold in mozzarella until smooth.
  7. Return chicken to skillet, spoon sauce over breasts, and simmer for 2 minutes.
  8. Add spinach, fold gently until wilted (about 1–2 minutes). Taste and adjust seasoning. Serve immediately.
