- 2 medium sweet potatoes, peeled and cubed (1/2-inch)
- 2 cups broccoli florets (1/2-inch)
- 1 tablespoon unsalted butter (or olive oil)
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce (or coconut aminos for a gluten-free option)
- 1 tablespoon apple cider vinegar
- Kosher salt and black pepper, to taste
- 2 tablespoons minced fresh parsley
Instructions
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper for easy cleanup.
- On the prepared sheet pan, combine the sliced sausage, cubed sweet potatoes, and broccoli florets. Spread everything in an even layer.
- In a small saucepan, melt the butter over medium heat. Sauté the minced garlic for 30–60 seconds until fragrant.
- Stir in the honey, soy sauce, apple cider vinegar, salt, and pepper; let it simmer for about 2–3 minutes to blend the flavors.
- Pour the honey garlic sauce over the sausage and vegetables, tossing everything to ensure it’s well coated.
- Roast in the oven for 25–30 minutes, stirring halfway through, until tender sweet potatoes and caramelized edges are achieved.
- Once done, sprinkle with fresh parsley and serve warm.
