- 3 medium carrots, chopped
- 2 cups broccoli florets
- 1 large red bell pepper, sliced
- 2 green onions, freshly chopped
- 1 tablespoon toasted sesame seeds
Instructions
- In a small bowl, whisk together the honey, soy sauce, minced garlic, and chicken broth.
- Place the chicken thighs at the bottom of the slow cooker.
- Evenly arrange the chopped carrots, broccoli florets, and sliced red bell pepper on top of the chicken.
- Drizzle the prepared sauce over everything, ensuring it’s well-coated.
- Cover and set the slow cooker on low for 4 to 6 hours.
- About 30 minutes before serving, mix the cornstarch with cold water to create a slurry, then stir it into the slow cooker.
Notes
