Instructions
- Preheat your oven to 425°F (220°C).
- Boil the baby carrots in a pot of salted water for about 10 minutes until tender.
- Drain the carrots and allow them to cool slightly.
- Smash the carrots on a baking sheet lined with parchment paper with a fork.
- Prepare the glaze by whisking together the olive oil, honey or maple syrup, salt, pepper, and garlic powder.
- Brush the glaze generously over the smashed carrots.
- Roast in the oven for 20-25 minutes until golden brown and crisp.
- Garnish with fresh parsley before serving.
