- 2 chicken breasts
- 1 cup rice
- 2 cups chicken broth
- 1 can cream of mushroom soup
- 1 onion, chopped
- 2 garlic cloves, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts generously with salt and pepper, then place them in the skillet. Cook until golden brown on both sides, about 5-7 minutes each.
- Remove the chicken from the skillet and set aside.
- Sauté the chopped onion and minced garlic in the same skillet until softened, about 3-4 minutes.
- Stir in the cream of mushroom soup and chicken broth to create a creamy sauce.
- Add the uncooked rice to the skillet, stirring to incorporate into the mixture. Bring to a simmer.
- Place the chicken back on top of the rice, cover the skillet, and reduce heat.
- Cook for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Serve warm and enjoy!
Notes
Garnish with freshly chopped parsley for added color. Pairs well with a green salad or roasted vegetables.
