- 2 cups grilled chicken, sliced
- 1 can black beans, rinsed and drained
- 1 cup sweet corn, fresh or frozen
- 4 cups romaine lettuce, chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- Chipotle-lime dressing, store-bought or homemade
Instructions
- Grill the chicken until fully cooked, then slice it into strips.
- In a large mixing bowl, combine the black beans, sweet corn, chopped romaine, diced avocado, and halved cherry tomatoes.
- Place the grilled chicken on top of the veggie mix.
- Drizzle the chipotle-lime dressing over the salad and toss gently to combine all the flavors.
- Serve it immediately for the freshest taste or keep it in the fridge for meal prep throughout the week!
