- Cook the Coconut Rice: Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine rice, coconut milk, water, and a pinch of salt. Bring to a boil, reduce heat, cover, and let simmer for 15 minutes. After cooking, let it sit covered for 5 minutes before fluffing with a fork.
- Marinate the Chicken: In a mixing bowl, whisk together maple syrup, sriracha, soy sauce, apple cider vinegar, minced garlic, and ginger. Season your chicken pieces with salt and pepper, toss them in the marinade, and let them sit for about 10-15 minutes to soak up those tasty flavors.
- Cook the Chicken: Heat olive oil in a skillet over medium heat. Add the marinated chicken, cooking it for about 4-5 minutes on each side until golden brown and cooked through. Pour in the remaining marinade and let it simmer for another 2 minutes to develop a sticky glaze.
- Assemble the Bowl: Serve the chicken over the fluffy coconut rice. Top it off with garnishes like fresh cilantro, lime wedges, sliced green onions, and toasted coconut flakes for an impressive finish.
