Description
A delightful and healthy dish featuring juicy chicken breasts filled with a savory spinach and cheese mixture.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cheese (mozzarella or feta), shredded or crumbled
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- Optional: herbs like thyme or basil for added flavor
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the filling: In a skillet over medium heat, add olive oil and sauté the garlic until fragrant. Then add the chopped spinach. Cook until wilted. Remove from heat and mix in the cheese, along with a pinch of salt and pepper.
- Prep the chicken: While the filling cools, take your chicken breasts and use a sharp knife to carefully create pockets. Avoid slicing all the way through; aim for one side to remain intact.
- Stuff the chicken: Generously spoon the spinach mixture into each chicken breast pocket. You can use toothpicks to secure them if needed.
- Bake: Place the stuffed chicken breasts on a baking dish. Season the tops with salt and pepper. Bake for about 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Serve: Let the chicken rest for a few minutes before slicing to allow the juices to redistribute.
Notes
Pound the chicken for even cooking and consider using a meat thermometer to ensure perfect doneness.
