Description

Strawberry Crunch Poke Cake is a moist vanilla cake soaked in strawberry gelatin and topped with whipped cream and buttery strawberry crunch.

  • 1 box vanilla cake mix plus box ingredients
  • 1 box 3 oz strawberry gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 tub 8 oz whipped topping thawed
  • 2 cups fresh strawberries chopped
  • 1 teaspoon vanilla extract
  • 1 tablespoon sugar
  • 1 cup strawberry preserves
  • 20 Golden Oreos
  • 3 tablespoons melted butter
  • 3 tablespoons dry strawberry gelatin powder

Instructions

  1. 1. Prepare and bake cake in 9×13-inch pan according to package directions.
  2. 2. Cool cake 15 minutes.
  3. 3. Poke holes evenly across cake using wooden spoon handle.
  4. 4. Dissolve strawberry gelatin in boiling water then stir in cold water.
  5. 5. Pour gelatin slowly over cake allowing it to soak in.
  6. 6. Refrigerate at least 2 hours until set.
  7. 7. Spread whipped topping evenly over chilled cake.
  8. 8. Toss strawberries with sugar and layer over topping.
  9. 9. Crush Golden Oreos into coarse crumbs.
  10. 10. Mix crumbs with melted butter and dry gelatin powder.
  11. 11. Sprinkle strawberry crunch evenly over cake and serve chilled.
