- 1 ½ cups sugar cookie dough
- 2 cups cream cheese, softened
- ¾ cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- ½ cup sour cream
- 1 tablespoon all-purpose flour
- 2 tablespoons sugar cookie dough balls (for topping)
Instructions
- Preheat the oven to 325°F (160°C).
- Press 1 cup of sugar cookie dough into the bottom of a springform pan to form the crust.
- Beat the softened cream cheese and sugar together until smooth and creamy.
- Add the vanilla extract and mix well to incorporate.
- Beat in the eggs, one at a time, ensuring each is fully combined before adding the next.
- Mix in the sour cream and flour until just combined—don’t overmix; some lumps are okay!
- Pour the cheesecake mixture over the prepared cookie crust, spreading it out evenly.
- Drop spoonfuls of the remaining sugar cookie dough on top of the cheesecake.
- Bake in the preheated oven for about 50-60 minutes, or until the edges are set and the center remains slightly jiggly.
- Allow the cheesecake to cool to room temperature before refrigerating for at least 240 minutes (or overnight) to set completely.
Notes
If using store-bought sugar cookie dough, it will save time. Greek yogurt can replace sour cream for a slightly tangy flavor.
