  • 2 tablespoons sugar cookie dough balls (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Press 1 cup of sugar cookie dough into the bottom of a springform pan to form the crust.
  3. Beat the softened cream cheese and sugar together until smooth and creamy.
  4. Add the vanilla extract and mix well to incorporate.
  5. Beat in the eggs, one at a time, ensuring each is fully combined before adding the next.
  6. Mix in the sour cream and flour until just combined—don’t overmix; some lumps are okay!
  7. Pour the cheesecake mixture over the prepared cookie crust, spreading it out evenly.
  8. Drop spoonfuls of the remaining sugar cookie dough on top of the cheesecake.
  9. Bake in the preheated oven for about 50-60 minutes, or until the edges are set and the center remains slightly jiggly.
  10. Allow the cheesecake to cool to room temperature before refrigerating for at least 240 minutes (or overnight) to set completely.

Notes

If using store-bought sugar cookie dough, it will save time. Greek yogurt can replace sour cream for a slightly tangy flavor.
