A delicious mash-up of tacos and pasta that’s fast, flexible, and full of flavor.
Ingredients

- 8 ounces pasta (penne or rotini)
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 cup corn (fresh, frozen, or canned)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- Chopped green onions (for garnish)
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
- While the pasta cooks, heat a large skillet over medium. Add the ground beef or turkey and brown, breaking it up with a spatula for 6–8 minutes. Drain any excess fat.
- Stir the taco seasoning into the cooked meat. Add the diced tomatoes with green chilies, black beans, and corn. Simmer for 5–7 minutes.
- Add the cooked pasta to the skillet and toss until everything is combined. If it seems dry, add a splash of pasta water.
- Remove from heat and stir in the shredded cheese and sour cream until melted and creamy.
- Taste and season with salt and pepper as needed. Serve hot, topped with chopped green onions.
Notes
You can add extra spices or veggies to customize this dish. For a saucier pasta, reserve some pasta water to adjust the consistency.
