  • 2 tablespoons Dried Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup (120ml) Vegetable or Chicken Broth
  • Fresh Parsley or Oregano, for garnish (optional)

Instructions

  1. Wash and scrub the potatoes thoroughly. Peel if you prefer, but the skin adds nice texture.
  2. Cut them into even wedges or chunks—about 1 to 1.5 inches is ideal.
  3. Soak the cut potatoes in cold water for 30-60 minutes to draw out excess starch.
  4. Drain the potatoes and pat them extremely dry with clean towels.
  5. Preheat your oven to 400°F (200°C) with an oven rack in the middle position.
  6. Whisk together the lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper in a large bowl.
  7. Add the thoroughly dried potato pieces and toss them vigorously to ensure even coating.
  8. Spread the marinated potatoes in a single layer on a large baking sheet, making sure not to overcrowd them.
  9. Roast for 20-25 minutes without disturbing.
  10. Flip the potatoes carefully, then pour the vegetable or chicken broth around them before returning to the oven.
  11. Continue roasting for another 25-35 minutes, flipping every 10-15 minutes to ensure even browning.
  12. Increase the oven temp to 425°F (220°C) for the last 10-15 minutes or broil for 1-3 minutes—watch closely!
  13. Remove them from the oven and let them rest in the pan for 5-10 minutes before garnishing with fresh parsley or oregano.
