- 2.5–3 lbs Russet or Yukon Gold Potatoes
- 1/2 cup (120ml) Freshly Squeezed Lemon Juice
- 1/2 cup (120ml) Good Quality Extra Virgin Olive Oil
- 4–6 cloves Garlic, minced
- 2 tablespoons Dried Oregano
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 cup (120ml) Vegetable or Chicken Broth
- Fresh Parsley or Oregano, for garnish (optional)
Instructions
- Wash and scrub the potatoes thoroughly. Peel if you prefer, but the skin adds nice texture.
- Cut them into even wedges or chunks—about 1 to 1.5 inches is ideal.
- Soak the cut potatoes in cold water for 30-60 minutes to draw out excess starch.
- Drain the potatoes and pat them extremely dry with clean towels.
- Preheat your oven to 400°F (200°C) with an oven rack in the middle position.
- Whisk together the lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper in a large bowl.
- Add the thoroughly dried potato pieces and toss them vigorously to ensure even coating.
- Spread the marinated potatoes in a single layer on a large baking sheet, making sure not to overcrowd them.
- Roast for 20-25 minutes without disturbing.
- Flip the potatoes carefully, then pour the vegetable or chicken broth around them before returning to the oven.
- Continue roasting for another 25-35 minutes, flipping every 10-15 minutes to ensure even browning.
- Increase the oven temp to 425°F (220°C) for the last 10-15 minutes or broil for 1-3 minutes—watch closely!
- Remove them from the oven and let them rest in the pan for 5-10 minutes before garnishing with fresh parsley or oregano.
Notes
For extra crispiness, ensure potatoes are thoroughly dried before marinating. Feel free to experiment with herbs for different flavors.
