Ingredients

- 1 cup cherry or grape tomatoes, halved
- 2 cloves garlic, minced
- 1 tablespoon extra virgin olive oil
- 1 teaspoon balsamic vinegar (optional)
- Salt and pepper, to taste
- 8 ounces goat cheese (softened)
- 1/4 cup fresh basil, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the halved tomatoes, minced garlic, olive oil, balsamic vinegar (if using), salt, and pepper in a mixing bowl. Toss until the tomatoes are evenly coated.
- Transfer the tomato mixture to a baking dish and spread it out.
- Crumble the softened goat cheese over the top of the tomatoes.
- Bake in the preheated oven for about 15-20 minutes or until the cheese starts to brown and bubble.
- Remove from the oven and sprinkle with fresh basil before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
