Description
Delightful cinnamon rolls infused with bourbon and topped with candied bacon, perfect for brunch or any special occasion.
Ingredients
- Smoked Bacon: 450 g
- Light Brown Sugar: 110 g (extra for filling and frosting)
- Pure Maple Syrup: 60 ml (extra for frosting)
- Bourbon Whiskey: 30 ml (plus a splash for flavor)
- Freshly Cracked Black Pepper: 1 tsp
- All-Purpose Flour: 30 g (for tangzhong), plus 440 g (for dough)
- Water: 180 ml (for tangzhong)
- Granulated Sugar: 67 g
- Instant Yeast: 2 tsp
- Fine Sea Salt: 0.75 tsp
- Whole Milk: 120 ml, room temperature
- Large Egg: 1, room temperature
- Unsalted Butter: 4 tbsp, softened; 113 g, room temperature for filling; and 56 g for frosting
- Ground Cinnamon: 2 tsp
- Crumble Candied Bacon: 1 cup (reserved from cooking)
- Cream Cheese: 57 g, room temperature
- Powdered Sugar: 95 g
Instructions
- Make the Candied Bacon: In a skillet over medium heat, cook the bacon until it’s crispy. Drain excess grease, then combine bacon with brown sugar, maple syrup, bourbon, and black pepper. Transfer to a baking sheet and bake at 350°F (175°C) for 10–15 minutes until caramelized. Allow to cool and crumble.
- Prepare the Tangzhong: In a saucepan, stir together 30 g of flour and 180 ml of water. Whisk constantly over medium heat until it thickens. Remove from heat and set aside to cool.
- Mix the Dough: In a mixing bowl, whisk together 440 g of flour, granulated sugar, instant yeast, and sea salt. Add the cooled tangzhong, milk, egg, and butter, then knead until the dough forms a smooth ball.
- Let the Dough Rise: Cover the bowl with a damp cloth and allow the dough to rise in a warm place until it has doubled in size, approximately 60 minutes.
- Shape the Rolls: Once risen, turn the dough out onto a floured surface and roll it into a rectangle. Spread the softened butter over the dough, sprinkle with brown sugar, cinnamon, and the crumbled bacon.
- Roll and Slice: Roll the dough tightly from the long side and slice it into 12 equal pieces. Place the rolls in a greased baking dish and let them rise until puffy, about 30 minutes.
- Bake the Rolls: Preheat your oven to 375°F (190°C). Bake the rolls for 20-25 minutes or until they are golden brown.
- Make the Frosting: In a mixing bowl, beat together butter, cream cheese, powdered sugar, bourbon, and maple syrup until smooth.
- Frost and Serve: Drizzle the warm rolls with the frosting and sprinkle the top with reserved candied bacon strips.
Notes
Use room temperature ingredients for best results. You may substitute bourbon with non-alcoholic flavoring for a kid-friendly version.
