- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Cook the macaroni: Begin by boiling water in a large pot. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.
- Make the roux: In a large saucepan, melt the butter over medium heat. Once melted, add the flour, stirring continuously for about 1 minute until it becomes a light golden color.
- Whisk in the milk: Gradually pour in the milk while whisking to avoid lumps. Continue whisking until the mixture thickens, usually around 3-5 minutes.
- Add cheese: Stir in the cheddar and Monterey Jack cheeses, mixing until they are completely melted and the sauce is smooth and creamy.
- Combine and season: Stir in the cooked macaroni until it’s well coated with the cheese sauce. Season with salt, pepper, garlic powder, and onion powder to taste.
- Serve up: Enjoy immediately while it’s warm and gooey!
Notes
For a crispy topping, sprinkle with breadcrumbs and bake until golden brown. Can add veggies or proteins as desired.
