  • 1 cup grated Parmesan cheese

  • 2 cloves garlic, minced
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound each chicken breast until they are thin and even.
  3. Mix together the mozzarella, Parmesan, and fresh herbs in a bowl. Season with salt and pepper.
  4. Take a spoonful of the cheese mixture and place it in the center of each chicken breast.
  5. Fold or roll the chicken to create ‘pillows’.
  6. Heat the olive oil in a skillet over medium heat.
  7. Sear the chicken pillows for about 3-4 minutes on each side, until golden brown.
  8. Add minced garlic to the skillet and sauté until fragrant, about 30 seconds.
  9. Pour in the heavy cream and the remaining Parmesan, stirring until smooth.
  10. Return chicken pillows to the skillet, cover, and simmer for about 10-15 minutes.
  11. Serve warm, drizzled with the creamy Parmesan sauce.
