- 2 chicken breasts
- 1 cup mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 tablespoons fresh herbs (such as parsley, basil, or thyme)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
Instructions
- Preheat your oven to 375°F (190°C).
- Pound each chicken breast until they are thin and even.
- Mix together the mozzarella, Parmesan, and fresh herbs in a bowl. Season with salt and pepper.
- Take a spoonful of the cheese mixture and place it in the center of each chicken breast.
- Fold or roll the chicken to create ‘pillows’.
- Heat the olive oil in a skillet over medium heat.
- Sear the chicken pillows for about 3-4 minutes on each side, until golden brown.
- Add minced garlic to the skillet and sauté until fragrant, about 30 seconds.
- Pour in the heavy cream and the remaining Parmesan, stirring until smooth.
- Return chicken pillows to the skillet, cover, and simmer for about 10-15 minutes.
- Serve warm, drizzled with the creamy Parmesan sauce.
Notes
For a spicy kick, add crushed red pepper flakes. For a vegetarian option, consider using tofu or portobello mushrooms.
