- 2 lbs boneless chicken thighs
- 12 corn tortillas
- 3 ripe avocados
- 1 white onion
- 1 bunch fresh cilantro
- 2 limes
- 4 oz queso fresco cheese
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Marinate the chicken: In a bowl, season the chicken thighs with chili powder, cumin, paprika, salt, and pepper. Allow them to marinate for at least 15 minutes.
- Make guacamole: Mash the ripe avocados in a separate bowl. Add lime juice and a pinch of salt, mixing until smooth. Set aside.
- Prepare the veggies: Dice the white onion finely, chop the fresh cilantro, and crumble the queso fresco cheese. Cut the limes into wedges for serving.
- Cook the chicken: Heat a skillet over medium-high heat. Cook the marinated chicken for 6-8 minutes on each side or until cooked through. Remove and let rest for a few minutes before slicing.
- Warm the tortillas: In the same skillet, warm the corn tortillas for about 30 seconds on each side until soft.
- Assemble the tacos: Slice the cooked chicken and place it onto the warm tortillas. Top with guacamole, diced onion, chopped cilantro, and crumbled cheese. Squeeze fresh lime juice over the tacos and serve immediately.
Notes
For the best flavor, consider marinating the chicken for up to 24 hours. Keep tortillas warm in a clean kitchen towel for serving.
