  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 cup unsalted butter, softened
  • 1 cup vanilla custard (store-bought or homemade)
  • 1 cup chocolate chips
  • 1 egg, for egg wash

Instructions

  1. Mix the dry ingredients: In a large mixing bowl, combine the flour, sugar, yeast, and salt until well blended.
  2. Combine the wet ingredients: In a separate bowl, whisk together the eggs and milk until thoroughly blended.
  3. Bring it together: Gradually pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Knead the dough: Add the softened butter and knead the dough by hand for about 10 minutes or 5 minutes using a stand mixer until it’s smooth and elastic.
  5. First rise: Transfer the dough to a greased bowl, cover it with a clean kitchen towel, and set it in a warm place for about 60 minutes or until it doubles in size.
  6. Punch down & divide: Gently punch down the risen dough and divide it into 12-15 equal pieces.
  7. Fill the dough: Flatten each piece slightly and place about a tablespoon of vanilla custard along with a few chocolate chips in the center. Fold the dough over the filling to completely seal it.
  8. Second rise: Place the filled brioches in a greased baking dish, cover them, and let them rise for an additional 30 minutes.
  9. Preheat the oven: Preheat your oven to 375°F (190°C) while the brioches are rising.
  10. Prep for baking: Brush the tops of the brioches with the egg wash for a shiny, golden result.
  11. Bake: Bake for 20-25 minutes until they are golden brown and puffed up beautifully.
  12. Cool & enjoy: Once baked, allow them to cool slightly before serving. These brioches are best enjoyed warm.

Notes

Can be stored at room temperature for a couple of days or refrigerated for longer freshness. For freezing, wrap individually and place in a zip-top freezer bag.
