- 4 cups all-purpose flour
- 1/4 cup sugar
- 1 packet active dry yeast (2 1/4 teaspoons)
- 1/2 teaspoon salt
- 3 large eggs
- 1/2 cup milk
- 1/2 cup unsalted butter, softened
- 1 cup vanilla custard (store-bought or homemade)
- 1 cup chocolate chips
- 1 egg, for egg wash
Instructions
- Mix the dry ingredients: In a large mixing bowl, combine the flour, sugar, yeast, and salt until well blended.
- Combine the wet ingredients: In a separate bowl, whisk together the eggs and milk until thoroughly blended.
- Bring it together: Gradually pour the wet mixture into the dry ingredients and stir gently until just combined.
- Knead the dough: Add the softened butter and knead the dough by hand for about 10 minutes or 5 minutes using a stand mixer until it’s smooth and elastic.
- First rise: Transfer the dough to a greased bowl, cover it with a clean kitchen towel, and set it in a warm place for about 60 minutes or until it doubles in size.
- Punch down & divide: Gently punch down the risen dough and divide it into 12-15 equal pieces.
- Fill the dough: Flatten each piece slightly and place about a tablespoon of vanilla custard along with a few chocolate chips in the center. Fold the dough over the filling to completely seal it.
- Second rise: Place the filled brioches in a greased baking dish, cover them, and let them rise for an additional 30 minutes.
- Preheat the oven: Preheat your oven to 375°F (190°C) while the brioches are rising.
- Prep for baking: Brush the tops of the brioches with the egg wash for a shiny, golden result.
- Bake: Bake for 20-25 minutes until they are golden brown and puffed up beautifully.
- Cool & enjoy: Once baked, allow them to cool slightly before serving. These brioches are best enjoyed warm.
Notes
Can be stored at room temperature for a couple of days or refrigerated for longer freshness. For freezing, wrap individually and place in a zip-top freezer bag.
