- 2 pounds boneless, skinless chicken breasts
- 6 medium potatoes, thinly sliced
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- ½ teaspoon paprika
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Pat the chicken dry and season both sides with salt, pepper, garlic powder, and onion powder.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden.
- Transfer the chicken to a plate.
- Slice the potatoes and arrange a single layer in the prepared dish, seasoning lightly with salt and pepper. Repeat layers until all slices are used.
- Place the seared chicken on top of the potatoes, tucking them slightly into the layers.
- Whisk together the sour cream, chicken broth, dried thyme, and paprika in a medium bowl until smooth. Pour the mixture evenly over the chicken and potatoes.
- Sprinkle the shredded cheddar cheese over the top. Cover the dish tightly with foil.
- Bake covered for 30 minutes. Remove the foil and bake an additional 15–20 minutes until the cheese is golden and the potatoes are tender.
- Let the casserole rest for 5–10 minutes before serving.
Notes
Letting the casserole rest will help the sauce thicken slightly.
