Instructions
- Heat oil or butter in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 3-5 minutes.
- Stir in the sliced mushrooms and minced garlic; cook until the mushrooms are browned, about 7 minutes.
- Incorporate the dried thyme and cook for an additional minute.
- Pour in the broth and bring to a simmer; let bubble gently for about 10 minutes.
- Reduce the heat and stir in the heavy cream, warming through without boiling.
- Blend the soup to your desired consistency using an immersion blender or regular blender.
- Season with salt and pepper to taste before serving.
Notes
For a dairy-free version, substitute heavy cream with coconut milk. You can also use vegetable broth for a vegetarian option.
