Ingredients

  • 4 pieces of boneless chicken breasts
  • 1 cup (100 g) of finely grated Parmesan cheese
  • 1 cup (120 g) of breadcrumbs
  • 2 large eggs
  • 4 cloves of garlic
  • 1 cup (240 ml) of heavy cream
  • 2 tbsp of olive oil or butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Take the chicken breasts and place them between plastic wrap.
  3. Using a meat mallet or rolling pin, pound the chicken until it’s about 1-inch thick.
  4. Season both sides of the chicken with salt and pepper.
  5. Set up your breading station: break and beat the eggs in one bowl and mix breadcrumbs and Parmesan in another.
  6. Dip each piece of chicken into the beaten eggs, allowing any excess to drip off, then coat it in the breadcrumb mixture.
  7. Arrange the breaded chicken on a greased baking sheet.
  8. Bake the chicken for 25-30 minutes until golden brown and reaches an internal temperature of 165°F (75°C).
  9. For an extra crunch, broil the chicken for an additional 2-3 minutes.
  10. While the chicken bakes, melt butter or heat olive oil in a saucepan over medium heat.
  11. Sauté minced garlic until fragrant and golden, about 1-2 minutes.
  12. Add in heavy cream and simmer for 5 minutes, stirring continuously.
  13. Season the sauce with salt and pepper and add red pepper flakes if desired.

Notes

For a lighter dish, substitute skinless chicken thighs or use crushed gluten-free crackers as a breadcrumb alternative.
