- 4 pieces of boneless chicken breasts
- 1 cup (100 g) of finely grated Parmesan cheese
- 1 cup (120 g) of breadcrumbs
- 2 large eggs
- 4 cloves of garlic
- 1 cup (240 ml) of heavy cream
- 2 tbsp of olive oil or butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Take the chicken breasts and place them between plastic wrap.
- Using a meat mallet or rolling pin, pound the chicken until it’s about 1-inch thick.
- Season both sides of the chicken with salt and pepper.
- Set up your breading station: break and beat the eggs in one bowl and mix breadcrumbs and Parmesan in another.
- Dip each piece of chicken into the beaten eggs, allowing any excess to drip off, then coat it in the breadcrumb mixture.
- Arrange the breaded chicken on a greased baking sheet.
- Bake the chicken for 25-30 minutes until golden brown and reaches an internal temperature of 165°F (75°C).
- For an extra crunch, broil the chicken for an additional 2-3 minutes.
- While the chicken bakes, melt butter or heat olive oil in a saucepan over medium heat.
- Sauté minced garlic until fragrant and golden, about 1-2 minutes.
- Add in heavy cream and simmer for 5 minutes, stirring continuously.
- Season the sauce with salt and pepper and add red pepper flakes if desired.
Notes
For a lighter dish, substitute skinless chicken thighs or use crushed gluten-free crackers as a breadcrumb alternative.
