  • 1 3/4 tsp sweet smoked paprika
  • 1 1/2 tsp oregano
  • 1 1/2 tsp garlic powder

  • 1/2 tsp salt
  • 12 oz gluten-free farfalle
  • 4 tbsp dairy free butter
  • 2 tbsp minced onion
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 2 cups chicken broth
  • 1 2/3 tbsp gluten free 1:1 flour
  • 2 cups dairy free heavy cream
  • 2 cups chopped spinach
  • 8 oz dairy free parmesan (shredded)
  • 2 tbsp pasta water (as needed)

Instructions

  1. Boil the pasta in a large pot of water according to the package directions for al dente. Drain and set aside, reserving a bit of the pasta water.
  2. Toss the diced chicken with sweet smoked paprika, oregano, garlic powder, thyme, black pepper, and salt until evenly coated.
  3. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and sear for about 3 to 4 minutes on each side until fully cooked. Transfer chicken to a plate.
  4. Add dairy-free butter to the same skillet and let it melt. Mix in all the sauce seasonings and simmer for about a minute.
  5. Sprinkle in the flour, stirring well to avoid lumps, and scrape the bottom of the skillet for any flavorful bits.
  6. Gradually add chicken broth and dairy-free heavy cream, whisking until combined. Toss in chopped spinach and continue whisking until thickened (3 to 4 minutes).
  7. Add dairy-free parmesan cheese and stir until melted.
  8. Combine the cooked pasta with the sauce, ensuring everything is well-coated. If too thick, add reserved pasta water as needed.
  9. Fold in the seared chicken gently and serve immediately.

Notes

Feel free to swap chicken for your favorite protein or use firm tofu. Adjust pasta type according to dietary preferences.
