Description
A hearty one-pan Cowboy Casserole featuring ground beef, creamy mushroom soup, corn, cheese, and crispy tater tots.

- 1 lb ground beef (browned and drained)
- 1 can cream of mushroom soup
- 1/2 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 can corn (drained)
- 1 cup cheese (shredded, cheddar or pepper jack)
- 1 bag frozen tater tots
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Brown 1 lb ground beef in a skillet over medium-high heat until no pink remains. Drain excess fat.
- Stir in 1 can cream of mushroom soup, 1/2 cup milk, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, and 1/2 tsp pepper until smooth and warmed through.
- Add the drained can of corn and combine evenly with the beef-soup mixture. Spread this filling into the prepared baking dish.
- Sprinkle 1 cup shredded cheese evenly over the filling.
- Arrange frozen tater tots in a single layer on top of the cheese.
- Bake for 25–30 minutes, or until the tater tots are golden and the cheese is bubbly.
- Remove from oven and let the casserole rest for 5 minutes before serving.
Notes
For extra-crispy tots, start with them at room temperature. Adjust salt for salty cheese.
