A hearty one-pan Cowboy Casserole featuring ground beef, creamy mushroom soup, corn, cheese, and crispy tater tots.


Ingredients

  • 1 lb ground beef (browned and drained)
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 can corn (drained)
  • 1 cup cheese (shredded, cheddar or pepper jack)
  • 1 bag frozen tater tots

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Brown 1 lb ground beef in a skillet over medium-high heat until no pink remains. Drain excess fat.
  3. Stir in 1 can cream of mushroom soup, 1/2 cup milk, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, and 1/2 tsp pepper until smooth and warmed through.
  4. Add the drained can of corn and combine evenly with the beef-soup mixture. Spread this filling into the prepared baking dish.
  5. Sprinkle 1 cup shredded cheese evenly over the filling.
  6. Arrange frozen tater tots in a single layer on top of the cheese.
  7. Bake for 25–30 minutes, or until the tater tots are golden and the cheese is bubbly.
  8. Remove from oven and let the casserole rest for 5 minutes before serving.

Notes

For extra-crispy tots, start with them at room temperature. Adjust salt for salty cheese.
