Ingredients
Scale
- 1 head of cabbage, chopped
- 1 pound ground beef or turkey
- 1 onion, chopped
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup corn (frozen or canned)
- 1 packet ranch dressing mix
- 1 cup shredded cheese (optional)
- 2 cups Fritos
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the meat: In a large skillet, cook the ground meat and chopped onion over medium heat until the meat is no longer pink. Drain any excess fat.
- Add the cabbage: Stir in the chopped cabbage and sauté for about 5 minutes, allowing it to soften slightly.
- Mix in other ingredients: Add the black beans, diced tomatoes, corn, and ranch dressing mix. Stir well and continue cooking until everything is heated through.
- Transfer to casserole dish: Move the mixture to a greased casserole dish, spreading it evenly.
- Top it off: Sprinkle the shredded cheese over the top, then add the Fritos in an even layer.
- Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly along the edges.
- Serve warm: Enjoy the comforting goodness of Frito Cowboy Cabbage straight from the oven!
