  • 1 tsp garlic powder

  • 1/4 cup cornstarch (for coating)
  • 1/4 cup oil (for pan frying)
  • 2 tbsp butter
  • 1 bulb garlic (finely minced)
  • 1 tbsp soy sauce (for the sauce)
  • 1 tbsp honey
  • Dried parsley for garnish (optional)

Instructions

  1. Prep the Chicken: If needed, debone the chicken thighs but leave the skin on for crispiness. Rinse under cold water and then pat dry with paper towels.
  2. Score and Pound (optional): Lightly score the meat side a few times. Then, use the back of a knife to gently pound it flat.
  3. Marinate: In a bowl, mix the soy sauce, oyster sauce, garlic powder, salt, and black pepper. Add the chicken thighs, making sure they are evenly coated. Let them marinate for at least 15 minutes.
  4. Coat with Cornstarch: Lightly dredge each thigh in cornstarch, shaking off any excess.
  5. Fry the Chicken: In a large skillet, heat oil over medium-low. Place chicken skin-side down and fry for about 4–5 minutes on each side, or until both sides turn golden brown and crispy.
  6. Make the Sauce: Remove the chicken from the skillet and set aside. In the same pan, melt butter over low heat, then add the minced garlic. Sauté until fragrant, about 30 seconds. Stir in honey and soy sauce, simmering gently until slightly thickened.
  7. Coat and Serve: Return the chicken to the pan, ensuring each piece is generously coated in the sauce. Garnish with dried parsley if desired and serve hot.

Notes

For a lower sodium option, use low-sodium soy sauce. Chicken breasts can also be substituted for thighs.
