- 4 boneless chicken breasts
- 1 cup Romano cheese, grated
- 1/2 cup breadcrumbs
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Combine grated Romano cheese, breadcrumbs, lemon zest, minced garlic, salt, and pepper in a mixing bowl until well mixed.
- Dip each chicken breast into the lemon juice, allowing excess to drip off, then coat evenly in the cheese mixture.
- Heat olive oil in a large skillet over medium heat.
- Sear the chicken breasts in the skillet for about 3-4 minutes on each side until they are golden brown.
- Transfer the seared chicken to a baking dish and bake in the preheated oven for 15-20 minutes or until cooked through.
- Garnish with fresh parsley and serve hot.

For best flavor, use fresh lemons. You can substitute Romano with Parmesan if needed.
