- 1 cup All-Purpose Flour
- 1 1/2 teaspoons Baking Powder
- 1/4 teaspoon Salt
- 1 cup Granulated Sugar
- 1 cup Buttermilk
- 1 teaspoon Vanilla Extract
- 1 teaspoon Lemon Extract (optional)
- 21 oz can of Lemon Pie Filling (or homemade equivalent)
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it lightly.
- Mix the Cobbler Batter: In a large bowl, melt the butter. Add the flour, baking powder, salt, sugar, buttermilk, vanilla, and lemon extract. Stir until well combined.
- Pour the Batter Over the Butter: Pour the batter into the prepared baking dish, gently spreading it out.
- Add the Lemon Pie Filling: Pour the lemon filling evenly over the batter; do not stir. It will create a “magic” layer as it bakes.
- Bake the Cobbler: Bake in the preheated oven for 45–50 minutes, or until the top is golden brown and a toothpick comes out clean.
- Let the Cobbler Cool Slightly: Once baked, take it out and let it cool for at least 15 minutes. This will help it set.
- Serve and Enjoy: Cut into squares and serve warm, possibly with a scoop of vanilla ice cream.
Notes
For variation, substitute lemon filling with other fruit flavors or add herbs to the batter.
