- 2 cups mashed potatoes (leftover or freshly prepared)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup breadcrumbs (preferably panko)
- 1 egg
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Oil for frying
Instructions
- Mix the ingredients: In a large mixing bowl, combine your mashed potatoes, shredded cheese, breadcrumbs, beaten egg, chopped green onions, salt, and pepper. Mix everything until well blended.
- Form the puffs: Wet your hands slightly to prevent sticking, then scoop out small portions of the mixture and roll them into golf ball-sized puffs.
- Heat the oil: In a frying pan over medium heat, pour enough oil to cover the bottom. Allow it to heat until shimmering.
- Fry the puffs: Carefully place the puffs in the hot oil, frying for about 3 to 4 minutes per side until golden brown and crispy.
- Drain and serve: Remove the puffs from the oil and let them drain on paper towels. Serve them hot for best results!
Notes
Adjust seasoning and try different cheeses for variety. Freeze cooked puffs for up to 2 months.
