  • 3 russet potatoes (cooked and cubed)
  • ¼ cup bacon (diced)
  • ¼ cup green onion (diced)
  • ½ cup sour cream
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 block cheddar cheese (cut into strips)
  • ⅔ cup cornstarch
  • 100 g panko breadcrumbs
  • Flour for dusting
  • 1 egg (beaten)
  • 1 liter vegetable oil or canola oil for frying

Instructions

  1. In a large bowl, combine the cooked and cubed russet potatoes, diced bacon, green onions, sour cream, 1 teaspoon salt, and ½ teaspoon pepper. Mix until mostly smooth, leaving some chunks for texture.
  2. Cut the cheddar cheese into strips about ¼ inch thick.
  3. Take a spoonful of the potato mixture, flatten it out, and place a strip of cheese in the center. Wrap the potato mixture around the cheese to fully cover it. Repeat with the remaining mixture.
  4. Set up three bowls: one with flour, one with the beaten egg, and another with the cornstarch and panko breadcrumbs mixed together.
  5. Roll each potato stick in flour, dip into the egg, and then coat in the panko mixture until well covered.
  6. Heat vegetable or canola oil to 350°F (180°C) in a deep fryer or large pot. Fry the coated potato sticks for about 3 minutes or until golden brown and crispy.
  7. Use a slotted spoon to remove them from the oil and let them drain on paper towels. Sprinkle with a hint of salt while they’re still warm.
  8. If you prefer baking, preheat your oven to 400°F (200°C), arrange the sticks on a baking sheet, drizzle with olive oil, and bake them for about 15 minutes.
  9. Allow to cool slightly before serving.
