Description

Delicious hand-held sushi rolls packed with shrimp, avocado, and cucumber, perfect for a quick meal or special occasion.

Ingredients

Scale
  • 1 pound juicy shrimp, peeled and deveined
  • 1 ripe avocado, cut into thin strips
  • 1 medium cucumber, cut into long, thin strips
  • 46 sheets of roasted nori
  • 1/4 cup spicy mayo (mayonnaise mixed with sriracha to taste)

Instructions

  1. Prepare the shrimp: Boil in salted water until pink and opaque, about 2-3 minutes. Drain and allow to cool.
  2. Cut your ingredients: Slice the avocado and cucumber into thin strips.
  3. Lay out the nori: Place a sheet of nori on a clean surface with the shiny side facing down.
  4. Fill the nori: Lay a line of shrimp, avocado, and cucumber across the center of the nori.
  5. Add flavors: Drizzle with spicy mayo, adjusting the amount to your preference.
  6. Roll the nori: Gently lift one edge of the nori and roll it over the filling, tucking it tightly as you go. Seal the edge with a dab of water.
  7. Serve: Slice the roll in half or leave it whole for a dramatic presentation.

Notes

Best enjoyed fresh. Store leftovers in an airtight container in the fridge and consume within 24 hours.
