Instructions
- Place the chicken thighs in the slow cooker.
- Mix together the peanut butter, soy sauce, chicken broth, honey, minced garlic, grated ginger, and red pepper flakes in a bowl.
- Pour the sauce over the chicken, ensuring all pieces are well-coated.
- Cover and cook for low for 6-8 hours or high for 3-4 hours.
- Shred the chicken and stir it back into the sauce.
- Season with salt and pepper to taste.
- Serve over rice, noodles, or salad, garnished with chopped peanuts and green onions.

For a leaner option, substitute chicken thighs with chicken breasts. For nut allergies, use sunflower seed butter.
