Ingredients

  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup warm water (about 110°F/43°C)
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 4 cloves roasted garlic
  • 2 tablespoons fresh herbs (like parsley or chives)

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water and sugar, stirring gently. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it froths.
  2. Combine dry ingredients: In a larger mixing bowl, whisk together the flour and salt.
  3. Mix the dough: Pour the yeast mixture into the dry ingredients along with the olive oil. Stir until a shaggy dough forms.
  4. Knead: Turn out the dough onto a lightly floured surface and knead for about 5-7 minutes.
  5. First rise: Lightly oil a bowl, place the dough inside, cover it, and let it rise in a warm spot for about 1 hour.
  6. Preheat your oven to 375°F (190°C).
  7. Prepare filling: Roll the dough into a rectangle shape, spread the roasted garlic, sprinkle the cheese and herbs.
  8. Roll and shape: Roll the rectangle tightly into a log, pinch the seam closed and place it seam-side down in a greased loaf pan.
  9. Second rise: Cover and let it rise again for about 30 minutes.
  10. Bake: Bake for 30-35 minutes until golden brown and hollow when tapped.
  11. Cool slightly: Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
